Jerusalem Artichokes

Ingredients    
  4 Jerusalem Artichokes
    Olive Oil
  1 Chopped Large Onion
  1 tsp Salt
  1 tin chopped tomatoes

Method

Peel and slice the artichokes - quarter inch slices

Fry the onions in hot olive oil until transparent.  Add the Artichokes and Fry .  Add  the tomatoes and salt and simmer for 5 to 15 minutes.
