Ingredients
100ml Olive Oil
4 slices Smoked Bacon or Smoked Lardons
2 slices White Bread
1 head Curly Endive, or mixed salad
30ml White Wine Vinegar
5ml Dijon Mustard
salt and pepper
large garlic clove crushed

Method

Wash the salad leaves and allow to drain well.

Cut the white bread into squares and fry in a little olive oil.  Put to one side.

Fry the bacon and keep hot.

Place all the other ingredients, except the salad leaves, in the pan, stir well and bring onto the heat.  Do not allow to boil.

Place the salad leaves in individual bowls, friend squares of bread and friend bacon.  Then pour on the hot oil etc mixture.  Serve at once.

 

Serves 4 people.
