Iced Orange Biscuits

 

Ingredients
Biscuits 8 oz Self Raising Flour
4 oz Margarine
2 oz Caster Sugar
1 Egg
1 Orange - grated rind
Icing 4 oz Sifted Icing Sugar
1 Orange - strained juice
a little crystallized orange peel
1 Egg White

Method

Using the K beater rub the fats into the flour and mix in the sugar and grated orange rind.  Stir in the beaten egg to form a smooth dough.   The dough should be firmer than a short crust pastry dough.

Roll out on a floured board and cut into shapes.  Place on a greased baking tray and prick the shapes with a fork.

Bake in a moderate oven 350F - 375F for 25 minutes.  Leave on the tin to cool and then lift them off onto a wire rack.

Make the icing by adding orange juice and egg white, a little at a time.  The icing should be quite stiff. Sandwich the biscuits with icing and put a little icing on top.  Decorate with crystallized orange peel.
