MethodSelect sound, unskinned tomatoes which are not too ripe. Remove the stalks, wash and dry and then pack in bottles. Cover with brine made from 1 oz salt to 4 pints water. Add a little sugar if desired - 0.5 oz. Sterilize in the same way that you would for fruit bottling. I found this very old hand made recipe book which my mother had put together.
