Bottling, preserving, pickling, smoking, salt pork and beef were all ways used in the war and before to ensure nothing was wasted from the garden and that there would be fruit and vegetables to eat all year round. It is an art lost in the modern kitchen but worthwhile to rejuvenate. All that you produce will be much more tasty than the jar of this or that from the local supermarket. I inherited large quantities of preserving jars from my mother and her recipe book. In the 70s HMSO still had a war time publication on preserving entitled Home Preservation of Fruit and Vegetables - ISBN 0 11 241321 8. A gem of a book if you can get hold of a copy.
