MethodSlice the tomatoes into a dish and sprinkle with salt and leave overnight. Boil up the vinegar and spices. Drain the tomatoes. Add the onions, sugar and raisins to the strained vinegar. Simmer until tender and then pot and cover. I found this very old hand made recipe book which my mother had put together. The pages had been duplicated on a Roneo or Gestetner.
