MethodCook the beetroot in the usual way until tender. Allow to cool and skin and cut into cubes. Chop the onions and apples finely and simmer in the vinegar with the sugar for about 20 minutes. Add the beetroot cubes and boil for another 15 minutes till softened and jam like. Pot in prepared warm jars and cover and store like jam. I found this very old hand made recipe book which my mother had put together. The pages had been duplicated on a Roneo or Gestetner. The cover had been hand decorated.
