Mincemeat slices

Ingredients 8 oz Self Raising Flour
4 oz butter or margarine
4 oz caster sugar
1 egg
milk to mix
Mincemeat
brown sugar

Method

Sift the flour int a bowl and rub in the fat lightly.  You can do this easily in a food mixer.

Mix in the egg and sugar sufficient milk to make a soft smooth dough.

Turn the mixture out onto a floured board and divide into 2 pieces.

Toll out each to approximately the same shape and size.  Place on on a greased baking sheet and spread with mincemeat taking care to leave a small margin of pastry round the edge.  Brush the edges with water or milk and place the other piece of pastry on top.  Seal the edges and roll the mixture lightly.

Bake at 375F for 15 Minutes.  When cool cut into 2" squares.  If you wish, before cutting, you can ice with soft white icing.  Please make your own rather than buying it ready made.
