| 4 oz | Self Raising Flour | |
| half tsp | Salt | |
| 4 oz | Fine or Medium Oatmeal | |
| 2 tsp | Ground Ginger | |
| 2 tsp | Cinnamon | |
| 1 | Egg | |
| 4 tbs | Milk | |
| 4 oz | Golden Syrup | |
| 4 oz | Trex or High Quality baking fat | |
| 4 oz | Demerara Sugar |
Method
Line a greased tin with greased proof paper. Sift the flour, salt, oatmeal, ginger and cinnamon into a bowl. Mix well. Beat the egg with the milk.
Melt the Golden Syrup with the sugar and Trex. Allow to cool a little and then add to the dry ingredients. Mix Well.
Pour the mixture into the baking tin and bake for 1 to 1 hour 15 minutes at 325F
